1 cup all-purpose flour

1 cup cornmeal

½ cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup canned pumpkin puree

½ cup buttermilk

¼ cup vegetable oil

2 large eggs

1 cup corn kernels (fresh, frozen, or canned and drained)

⅓ cup chopped pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      Mix Wet Ingredients: In another bowl, mix together the pumpkin puree, buttermilk, vegetable oil, and eggs until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to over mix; a few lumps are okay!

          Add Corn and Nuts: Fold in the corn kernels and chopped pecans, if using.

            Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

              Bake: Bake for 18-20 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
