Ingredients

4 tablespoons all-purpose flour

1 tablespoon granulated sugar

1/4 teaspoon baking powder

1/8 teaspoon baking soda

1/4 teaspoon ground cinnamon

Pinch of salt

3 tablespoons pumpkin puree

2 tablespoons milk (or dairy-free alternative)

1 tablespoon vegetable oil or melted butter

1/4 teaspoon vanilla extract

1 tablespoon brown sugar (for filling)

1/4 teaspoon ground cinnamon (for filling)

1 tablespoon cream cheese (for frosting)

1 tablespoon powdered sugar (for frosting)

1/2 teaspoon milk (for frosting)

Instructions

Mix Dry Ingredients: In a microwave-safe mug, combine the flour, granulated sugar, baking powder, baking soda, cinnamon, and a pinch of salt. Stir well to mix all of the dry ingredients evenly.

Add Wet Ingredients: Add the pumpkin puree, milk, vegetable oil (or melted butter), and vanilla extract to the mug. Stir the mixture until fully incorporated and smooth.

Prepare Filling: In a small bowl, mix the brown sugar and ground cinnamon for the filling. Sprinkle this mixture evenly over the batter in the mug.

Combine and Swirl: Using a fork or a toothpick, gently swirl the cinnamon sugar mixture into the batter to create a marbled effect without fully mixing it in.

Microwave: Place the mug in the microwave and cook on high for 1 to 1.5 minutes. Start with 1 minute and check for doneness; the cake should be set in the center but may still look slightly moist (it will continue to cook as it cools). Avoid overcooking.

Make the Frosting: In a small bowl, mix the cream cheese, powdered sugar, and milk until smooth and creamy. Adjust the thickness with more milk or powdered sugar as needed.

Serve: Once the cake is done, let it cool for a minute before spooning the cream cheese frosting on top. You can also add a sprinkle of extra cinnamon for an added touch. Enjoy warm!
