Ingredients

1 cup creamy peanut butter (preferably natural)

1 ripe banana, mashed

1/2 cup rolled oats

1/2 cup vanilla protein powder (whey or plant-based)

1/4 cup honey or maple syrup (adjust to taste)

1/4 teaspoon baking soda

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dark chocolate chips or walnuts (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the creamy peanut butter, mashed banana, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

Prepare Dry Ingredients: In another bowl, whisk together the rolled oats, protein powder, baking soda, and salt until evenly mixed.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until everything is well incorporated. If you're opting for chocolate chips or walnuts, fold them in at this stage.

Form Cookies: Using a tablespoon or a cookie scoop, drop rounded dollops of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dollop slightly with the back of your hand or a fork.

Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the edges turn golden. The centers should remain slightly soft.

Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, enjoy these delicious, healthy cookies as a post-workout snack or a quick breakfast on the go!
