4 large bell peppers (any color)

2 ripe peaches, diced

1 cup cooked quinoa

1 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh or frozen)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1/4 cup feta cheese, crumbled (optional)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers, removing seeds and ribs. Lightly drizzle the outside with olive oil and place them in a baking dish, cut side up.

      Make the Filling: In a large mixing bowl, combine the diced peaches, cooked quinoa, black beans, corn, smoked paprika, cumin, cayenne pepper, and half of the feta if using. Add salt and pepper to taste, mixing well.

        Stuff the Peppers: Spoon the filling into each bell pepper, pressing down gently to pack in the mixture.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and slightly charred.

            Serve: Remove from the oven, sprinkle the remaining feta on top, and garnish with fresh cilantro. Serve warm.
