2 large ripe peaches, diced

1 tablespoon brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

2 cups Greek yogurt (plain or vanilla flavored)

1 cup granola (preferably cinnamon or honey-flavored)

1 cup whipped cream (optional for topping)

Fresh mint leaves for garnish (optional)

Prepare the Peaches: In a medium bowl, combine the diced peaches, brown sugar, ground cinnamon, and lemon juice. Toss gently to coat the peaches evenly. Let them sit for about 10 minutes to allow the peaches to release some juices and absorb the flavors.

    Layer the Parfaits: In clear glasses or dessert cups, start with a layer of Greek yogurt at the bottom. Use about 1/4 cup of yogurt per glass.

      Add the Peaches: Spoon a generous layer (about 1/4 cup) of the marinated peaches on top of the yogurt. Make sure to include the lovely juices released by the peaches for added flavor.

        Granola Crunch: Sprinkle a layer of granola (about 1/4 cup) over the peaches to add a delightful crunch.

          Repeat Layers: Repeat the process by adding another layer of Greek yogurt followed by more peaches and granola. You can do this for two or three layers, depending on the size of your glasses and your preference.
