8 oz spaghetti or fettuccine

2 tablespoons olive oil

1 medium zucchini, sliced into half-moons

1 medium yellow bell pepper, sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Fresh basil leaves, for garnish

Zest of 1 lemon

1 tablespoon lemon juice

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the zucchini, bell pepper, broccoli florets, and carrot. Sauté for about 5-7 minutes, or until they are tender but still crisp.

      Add Garlic: Stir in the minced garlic and red pepper flakes (if using). Sauté for an additional 1-2 minutes until the garlic is fragrant but not browned.

        Prepare the Sauce: Reduce the heat to low, and pour in the heavy cream. Stir to combine with the vegetables, and let it simmer for 2-3 minutes. Gradually whisk in the Parmesan cheese until melted and the sauce is smooth.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat the noodles in the creamy sauce. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.

            Season and Finish: Add lemon zest, lemon juice, and season with salt and pepper to taste. Toss everything together until well mixed.

              Serve: Plate the pasta primavera, garnishing with fresh basil leaves and additional Parmesan cheese if desired. Serve immediately and enjoy!
