Ingredients

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (jasmine or long-grain)

3 cups beef broth

1 cup shredded sharp cheddar cheese

1/2 cup cream of mushroom soup (or homemade equivalent)

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon Worcestershire sauce

1/2 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon paprika

1/2 teaspoon dried thyme

Optional: 1/4 cup grated Parmesan cheese for added flavor

Instructions

Sauté the Beef: In a large pot or Dutch oven over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if needed.

Add Aromatics: Stir in the chopped onion and minced garlic, cooking until the onion becomes translucent and fragrant, about 2-3 minutes.

Mix & Season: Add the beef broth, uncooked rice, soy sauce, Worcestershire sauce, black pepper, salt, paprika, and thyme. Stir everything together until well-combined.

Incorporate Broccoli: Gently fold in broccoli florets into the mixture, ensuring they are submerged in the broth.

Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 18-20 minutes, or until the rice is fully cooked and has absorbed most of the liquid. Stir occasionally.

Add Cream and Cheese: Once the rice is cooked, stir in the cream of mushroom soup and cheese (reserve a small amount of cheddar for topping if desired). Mix until the cheese has melted and is evenly distributed throughout the casserole. If using, sprinkle the grated Parmesan on top.

Final Touch: For added flavor, you can place the pot under the broiler for 2-3 minutes to brown the cheese slightly, but this is optional.

Serve: Spoon into bowls and enjoy your creamy, cheesy casserole! Garnish with freshly cracked black pepper or extra thyme if desired.
