Ingredients

4 boneless, skinless chicken thighs

1 cup long-grain rice (such as jasmine or basmati)

4 cups chicken broth

1 cup heavy cream

6 cloves garlic, minced

1 medium onion, diced

1 cup frozen peas (optional)

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Sear the Chicken:

    - In a large skillet or deep frying pan, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, thyme, and paprika. Add the chicken to the pan and sear for about 5-7 minutes on each side until golden brown. Once cooked, remove the chicken from the pan and set aside.

      Sauté Aromatics:

        - In the same pan, add the butter and diced onions. Sauté for about 3-4 minutes until the onions become translucent. Add the minced garlic and sauté for another minute, being careful not to burn the garlic.

          Toast the Rice:

            - Add the rice to the pan, stirring to coat it with the oil and flavor from the garlic and onions. Cook for 1-2 minutes, allowing the rice to become slightly toasted.

              Add Liquids:

                - Pour in the chicken broth and heavy cream. Stir to combine, then bring the mixture to a gentle boil. Taste and adjust seasoning with salt and pepper.

                  Combine Chicken and Rice:

                    - Nestle the seared chicken thighs back into the pan, submerging them slightly in the liquid. If using frozen peas, sprinkle them over the top.

                      Simmer:

                        - Cover the skillet with a lid, reduce heat to low, and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

                          Finish and Serve:

                            - Once cooked, remove the skillet from heat. Let it sit for about 5 minutes before serving. Garnish with chopped fresh parsley and serve with lemon wedges on the side for an added zest.
