One-Pan Cheesy Broccoli and Rice Casserole

2 cups uncooked white or brown rice (long-grain)

4 cups vegetable or chicken broth

4 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for a kick)

1 tablespoon olive oil

Salt to taste

½ cup panko breadcrumbs (for topping)

2 tablespoons melted butter (for drizzling on top)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large, oven-safe skillet or pan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Rice and Broth: Stir in the uncooked rice, followed by the vegetable or chicken broth. Bring this mixture to a gentle boil.

        Incorporate the Broccoli: Once boiling, reduce the heat to low and mix in the broccoli florets, dried thyme, onion powder, garlic powder, black pepper, and red pepper flakes (if using). Stir well to combine.

          Cheese It Up: Remove the skillet from heat. Stir in half of the shredded sharp cheddar and half of the mozzarella cheese until melted and creamy.

            Prepare for Baking: Sprinkle the remaining cheddar and mozzarella on top of the casserole. In a small bowl, mix the panko breadcrumbs with melted butter and a pinch of salt. This will create a crunchy topping.
