1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, diced (red and green)

1 cup zucchini, diced

1 can (15 oz) diced tomatoes, undrained

1 cup corn kernels (fresh or frozen)

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and black pepper, to taste

2 cups cooked rice (white or brown)

2 cups shredded cheddar cheese

1/2 cup beef broth

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's ready for the casserole.

    Cook the Beef: In a large, deep skillet or a cast-iron pan over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess grease.

      Sauté the Veggies: To the pan with the cooked beef, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onions become translucent. Next, add the diced bell peppers and zucchini, cooking for another 5 minutes until they soften.
