One-Pan Cheesy Beef and Rice Casserole

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain white rice

2 cups beef broth

1 can (15 oz) diced tomatoes, undrained

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon dried Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat and Prepare: Preheat the oven to 375°F (190°C). In a large oven-safe skillet or a deep casserole dish, heat a medium flame over the stovetop.

    Brown the Beef: Add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess fat if necessary.

      Sauté Aromatics: Add the diced onion and garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.

        Combine Ingredients: Stir in the uncooked rice, beef broth, diced tomatoes (with their juices), frozen mixed vegetables, Italian seasoning, paprika, salt, and pepper. Mix well to combine all ingredients.
