2 medium zucchinis, shredded

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

1/4 cup sun-dried tomatoes, finely chopped

1/4 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup panko breadcrumbs (or gluten-free alternative)

1 tablespoon olive oil

Instructions
 

Prep the Zucchini:

    - Start by washing and shredding the zucchinis using a grater. Place the shredded zucchini in a clean kitchen towel or cheesecloth, twist it up, and squeeze to remove excess moisture. This step is crucial to prevent the bites from becoming soggy.

      Mix the Filling:
