Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 cup chopped mixed nuts (almonds, walnuts, pecans)

1/2 cup mini chocolate chips or dark chocolate chunks

1/4 cup dried fruit (raisins, cranberries, or apricots)

1/4 cup toasted coconut flakes (optional)

1/4 teaspoon cinnamon

Pinch of salt

Instructions

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped mixed nuts, mini chocolate chips, dried fruit, toasted coconut flakes (if using), cinnamon, and a pinch of salt. Mix well until all the dry ingredients are evenly distributed.

Add Wet Ingredients: In a separate bowl, mix the almond butter and honey (or maple syrup) until smooth. You may need to microwave the almond butter for about 20 seconds to make it easier to mix.

Mix Together: Pour the wet ingredients into the dry mixture. Use a spatula or your hands to combine everything until all the ingredients are well-coated and stick together. If the mixture feels too crumbly, add a little more almond butter or honey.

Shape the Balls: Once well combined, take a tablespoon-sized portion of the mixture and roll it into a ball. Place the formed ball on a baking sheet lined with parchment paper. Repeat this process until all the mixture is used.

Chill: Once shaped, refrigerate the energy balls for at least 30 minutes to help them firm up.

Serve & Store: Enjoy your trail mix energy balls as a quick snack! Store any leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.
