1 cup digestive biscuits or graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons brown sugar

Filling:

16 oz (450g) cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

1 cup ripe mango puree (about 2 medium ripe mangoes, pureed)

Zest of 1 lime

Topping:

1 mango, diced

1 tablespoon lime juice

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare Crust:

    - In a medium mixing bowl, combine the digestive biscuit crumbs, melted butter, and brown sugar. Stir until the mixture resembles wet sand.

      - Evenly distribute the crumb mixture among serving cups (about 6-8 cups) and press down firmly to create a solid base. Place the cups in the fridge to set while you prepare the filling.

        Make the Filling:

          - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add in the granulated sugar and vanilla extract, mixing until well combined.

              - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

                - Carefully fold in the mango puree and lime zest to the mixture. Ensure everything is well combined while keeping the mixture airy.

                  Assemble the Cups:
