1 cup unsweetened shredded coconut (plus extra for rolling)

1/2 cup almond flour

1/2 cup pitted dates (softened, if necessary)

1/4 cup cocoa powder

1/4 cup honey or maple syrup

1/4 teaspoon vanilla extract

Pinch of salt

1/4 cup dark chocolate chips (optional for drizzling)

Prepare Dates: If your dates are firm, soak them in warm water for about 10 minutes to soften, then drain.

    Combine Dry Ingredients: In a large bowl, mix the unsweetened shredded coconut, almond flour, cocoa powder, and salt until well combined.

      Blend Wet Ingredients: In a food processor, add the softened dates, honey or maple syrup, and vanilla extract. Blend until smooth and creamy.
