No-Bake Banana Oat Energy Stacks

Ingredients
  

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup natural nut butter (peanut, almond, or cashew)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 cup dark chocolate chips or dried fruit (optional)

A pinch of salt

Instructions
 

In a large mixing bowl, combine the mashed bananas, nut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

    Add the rolled oats, ground cinnamon, and a pinch of salt to the banana mixture. Stir until the oats are fully coated and the mixture is evenly combined. If you're using chocolate chips or dried fruit, fold them in at this stage.

      Line an 8x8-inch square baking dish or a similar-sized pan with parchment paper for easy removal.

        Transfer the oat mixture into the prepared dish, spreading it evenly into every corner. Press down firmly with a spatula or your hands to ensure it’s tightly packed and will hold together once chilled.

          Once the mixture is flattened out, cover the dish with plastic wrap or foil and place it in the refrigerator for at least 1 hour to set.

            After the chilling time is up, remove the dish from the refrigerator and lift the energy stack out using the edges of the parchment paper. Cut into squares or bars of your desired size.

              Enjoy immediately or store in an airtight container in the refrigerator for up to a week!
