Mini Veggie Lasagna Biscuit Bombs

Ingredients
  

1 can (8 oz) refrigerated biscuit dough (Flaky or buttermilk)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup spinach, chopped (fresh or frozen)

1/2 cup zucchini, finely diced

1/2 cup bell pepper, finely diced

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 cup marinara sauce (plus extra for serving)

Salt and pepper to taste

Olive oil spray (or extra virgin olive oil)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a medium bowl, combine ricotta cheese, 1/2 cup mozzarella, Parmesan cheese, chopped spinach, zucchini, bell pepper, garlic, oregano, basil, salt, and pepper. Mix thoroughly until well combined.

      Prepare the Biscuits: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a small disc, about 4 inches in diameter. Use a rolling pin if needed.

        Assemble the Bombs: Take a flattened biscuit and place about 2 tablespoons of the veggie filling in the center. Drizzle about a teaspoon of marinara sauce on top of the filling. Fold the edges of the biscuit up and over the filling, pinching to seal completely. Place the seam side down on the baking sheet. Repeat with the remaining biscuits and filling.

          Add Olive Oil: Lightly spray or brush the tops of the filled biscuit bombs with olive oil. This will help them become golden brown while baking.

            Bake the Biscuit Bombs: Bake in the preheated oven for 15-20 minutes or until the biscuits are puffed and golden brown.

              Garnish & Serve: Once baked, remove from the oven and let cool for a few minutes. Serve warm with extra marinara sauce for dipping.
