Mini Turkey Taco Stuffed Zucchini

4 medium zucchinis

1 pound ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro for garnish

Lime wedges for serving (optional)

Instructions
 

Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper for easy cleanup.

    Prepare the zucchinis: Cut each zucchini in half lengthwise and scoop out the insides with a spoon, creating boats. Keep the flesh you scoop out and chop it finely.

      Cook the turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté for 3-4 minutes until softened.

        Add the turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until it’s no longer pink, breaking it apart with a spatula as it cooks (about 5-6 minutes).

          Season and mix: Stir in the taco seasoning, chopped zucchini flesh, black beans, corn, diced tomatoes, salt, and pepper. Cook for an additional 5-7 minutes until everything is heated through and well-combined.

            Stuff the zucchinis: Spoon the turkey mixture evenly into each zucchini boat, pressing down gently to pack it in.

              Add cheese: Sprinkle shredded cheddar cheese on top of each stuffed zucchini.

                Bake: Place the stuffed zucchinis in the prepared baking dish and cover with foil. Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the zucchini is tender and the cheese is bubbly and golden.

                  Serve: Carefully remove the zucchinis from the oven. Garnish with freshly chopped cilantro and serve with lime wedges on the side if desired.
