Ingredients

4 large flour tortillas

8 oz cooked turkey bacon, chopped

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked black beans, drained and rinsed

1 medium avocado, sliced

1/4 cup fresh cilantro, chopped

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Sour cream (for serving)

Salsa (for serving)

Instructions

Prepare the Ingredients: Start by chopping the cooked turkey bacon into small pieces and slice the avocado. Set aside the sliced avocado and chopped cilantro for assembly.

Heat the Tortillas: In a large skillet, heat the olive oil over medium heat. Place one flour tortilla in the skillet and sprinkle half of it with a mix of cheddar and Monterey Jack cheese. Add a layer of chopped turkey bacon, black beans, followed by a pinch of smoked paprika, garlic powder, and onion powder.

Build the Stack: Fold the tortilla in half and cook for about 2-3 minutes on each side until it’s golden brown and the cheese has melted. Remove from the skillet and cut into quarters. Repeat this process with the remaining tortillas, layering in additional ingredients if you’d like.

Assemble the Stacks: On a serving plate, stack a few quarters of the quesadilla on top of each other. You can create mini stacks by using two to three quarters per stack. Top each stack with a few slices of avocado and a sprinkle of fresh cilantro.

Serve: Serve the mini quesadilla stacks warm with a side of sour cream and salsa for dipping. Enjoy your flavorful bites with family and friends!
