8 mini whole wheat pita breads

2 cups cooked chicken breast, shredded

1 cup marinara sauce (or pizza sauce)

1 cup shredded mozzarella cheese

1/2 cup bell peppers, diced (any color)

1/2 cup red onion, finely chopped

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional)

Fresh basil leaves, for garnish

Olive oil, for drizzling

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Chicken Filling: In a mixing bowl, combine the shredded cooked chicken, marinara sauce, Italian seasoning, garlic powder, and crushed red pepper flakes. Mix until well combined.

      Fill the Pitas: Carefully open each mini pita and fill them with a generous amount of the chicken mixture. Don’t overfill; just enough for the top to remain slightly exposed.

        Add Vegetables and Cheese: On top of the chicken mixture, sprinkle diced bell peppers, chopped red onion, and a teaspoon of shredded mozzarella cheese on each pita.

          Arrange on Baking Sheet: Place the stuffed pitas on a baking sheet lined with parchment paper. Drizzle a little olive oil over the top of each filled pita for extra flavor and moisture.
