The star of the Mini Chicken Tikka Naan Cups is the tender, shredded chicken, which can be easily sourced or prepared at home. For convenience, many home cooks opt for rotisserie chicken, which not only saves time but also provides a rich flavor thanks to its herbs and spices. If you prefer a homemade approach, poaching or grilling chicken breast seasoned with basic spices can yield equally delicious results. The key is ensuring the chicken is cooked through, shredded into bite-sized pieces, and allowed to soak up the marinade, which enhances its flavor and tenderness.

Ingredients

2 cups cooked chicken, shredded

1 cup plain yogurt

2 tablespoons tikka masala paste

1 tablespoon lemon juice

1 teaspoon garam masala

Salt and pepper to taste

4 mini naan breads or 8 naan bread halves

1 cup cucumber, diced

1 cup tomato, diced

1/2 cup red onion, finely chopped

Fresh cilantro, for garnish

1/2 cup shredded mozzarella cheese (optional)

Lime wedges, for serving

Instructions

Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken, yogurt, tikka masala paste, lemon juice, garam masala, salt, and pepper. Mix well until the chicken is thoroughly coated. Let it marinate for at least 30 minutes (or up to overnight in the fridge).

Preheat Oven: Preheat your oven to 375°F (190°C).

Shape Naan Cups: If using whole mini naan, cut each mini naan bread in half to create cups. If using larger naan, cut them into small squares. Place them on a baking sheet and slightly press them into a muffin tin or simply place them flat.

Assemble Naan Cups: Spoon the marinated chicken mixture generously into each naan cup. If desired, sprinkle some shredded mozzarella cheese on top for extra richness.

Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the naan is golden brown and crisp, and the filling is heated through.

Prepare Toppings: While the naan cups are baking, prepare the toppings. In a bowl, combine diced cucumber, tomato, and red onion. Season with a pinch of salt and a squeeze of lime juice.

Serve: Once the naan cups are out of the oven, allow them to cool slightly. Top each with a spoonful of the cucumber-tomato mixture and garnish with fresh cilantro.

Enjoy: Serve the Mini Chicken Tikka Naan Cups warm with lime wedges on the side for an extra zing!
