For the Chicken Tikka Marinade:

1 lb (450g) boneless, skinless chicken thighs or breasts, cut into small cubes

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

2 tablespoons tikka masala spice blend

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

For the Assembly:

1 head of butter or iceberg lettuce, leaves separated and washed

1 small red onion, finely chopped

1 medium cucumber, diced

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

1/2 cup mint yogurt sauce (store-bought or homemade)

Optional Garnish:

Squeeze of lime juice

Additional chopped cilantro

Marinate the Chicken: In a bowl, combine the yogurt, lemon juice, vegetable oil, tikka masala, garlic powder, ginger powder, salt, and pepper. Add the cubed chicken, ensuring it's well coated. Cover and let it marinate in the refrigerator for at least 1 hour (or overnight for best flavor).

    Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, thread the marinated chicken onto skewers (if using bamboo skewers, soak them in water for 30 minutes to prevent burning). Grill the chicken for about 10-12 minutes, turning occasionally, until cooked through and slightly charred. Remove from the skewers and chop into bite-sized pieces.

      Prepare the Lettuce Cups: While the chicken is cooking, prepare your lettuce cups. Select the most intact leaves of the butter or iceberg lettuce, and set them aside on a serving platter.
