4 small flour or whole wheat tortillas

1 cup fresh mozzarella cheese, shredded

1 cup cherry tomatoes, halved

½ cup fresh basil leaves, chopped

2 tablespoons balsamic glaze (plus extra for drizzling)

1 tablespoon olive oil

Salt and pepper, to taste

Optional: crushed red pepper flakes for added heat

Instructions
 

Preheat the Pan: Heat a non-stick skillet over medium heat. Add 1 tablespoon of olive oil and allow it to warm up.

    Prepare the Quesadilla Mixture: In a mixing bowl, combine the shredded mozzarella cheese, halved cherry tomatoes, and chopped basil. Drizzle with balsamic glaze and season with a pinch of salt, pepper, and optional crushed red pepper flakes. Mix gently to combine.

      Assemble the Quesadillas: Place a tortilla in the preheated skillet. Evenly spread a quarter of the cheese and tomato mixture over half of the tortilla. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook for 2-3 minutes on one side until the tortilla is golden brown and the cheese is starting to melt. Carefully flip it over and cook the other side for another 2-3 minutes until golden and crispy.

          Slice and Keep Warm: Remove the quesadilla from the skillet and let it cool slightly. Cut it into wedges. Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as needed.

            Serve: Arrange the quesadilla wedges on a serving platter, drizzle with additional balsamic glaze, and garnish with extra basil leaves. Enjoy warm as a delightful appetizer or snack!
