4 medium russet potatoes

1 cup cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions

1 tablespoon olive oil

Salt and pepper, to taste

Optional: crushed red pepper flakes for heat

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Scrub the russet potatoes under running water. Pat them dry with a towel and poke a few holes with a fork on each potato. Rub the skins with olive oil and sprinkle with salt.

      Bake Potatoes: Place the prepared potatoes directly on the oven rack and bake for about 45-60 minutes, until tender. You can check their doneness by inserting a fork into the center; it should slide in easily.

        Cool and Hollow Out: Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Slice each potato in half lengthwise and scoop out most of the insides, leaving a thin layer of potato on the skin for support.

          Mix Chicken Filling: In a bowl, combine the shredded chicken, BBQ sauce, and season with salt, pepper, and optional crushed red pepper flakes. Mix until the chicken is well-coated.

            Assemble Skins: Place the hollowed-out potato skins on a baking sheet. Fill each skin with the BBQ chicken mixture, then top generously with shredded cheddar cheese.

              Bake Again: Return the filled potato skins to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let them cool for a couple of minutes. Drizzle with sour cream and sprinkle chopped green onions on top before serving.
