Maple Sausage and Egg Breakfast Sandwiches

For the Sandwiches:

4 large eggs

4 maple-flavored breakfast sausage patties

4 slices of sharp cheddar cheese

4 whole wheat English muffins, split

2 tablespoons unsalted butter

1 tablespoon maple syrup

Salt and pepper to taste

Fresh arugula or spinach (optional)

For the Maple Mustard Sauce:

2 tablespoons Dijon mustard

2 tablespoons maple syrup

1 teaspoon apple cider vinegar

Pinch of black pepper

Prepare the Maple Mustard Sauce: In a small bowl, whisk together the Dijon mustard, maple syrup, apple cider vinegar, and black pepper until smooth. Set aside.

    Cook the Sausage: In a large skillet over medium heat, cook the maple sausage patties according to package instructions until they are browned and cooked through, about 4-5 minutes per side. Once cooked, remove the patties from the skillet and keep warm.

      Cook the Eggs: In the same skillet, using the leftover sausage drippings for flavor, crack the eggs into the skillet. Season with salt and pepper. Cook the eggs to your preferred doneness—sunny-side-up (about 2-3 minutes) is recommended if you want the yolks runny.

        Melt the Cheese: Place a slice of sharp cheddar cheese over each egg in the skillet. Cover the skillet with a lid to melt the cheese, about 1-2 minutes.

          Toast the English Muffins: While the eggs are cooking, in another skillet or toaster, lightly toast the English muffin halves until golden brown. Spread a bit of butter on each half for extra flavor.

            Assemble the Sandwiches: Start with the bottom half of the toasted English muffin. Add a sausage patty, followed by the cheesy egg. Drizzle a spoonful of the maple mustard sauce over the egg (and add a handful of fresh arugula or spinach if desired) before capping it with the top half of the muffin.
