1 medium acorn squash

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon cayenne pepper (optional, for a kick)

Fresh thyme sprigs (for garnish)

Crumbled feta cheese (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Cut the acorn squash in half from top to bottom. Scoop out the seeds and stringy insides with a spoon. Slice each half into 1-inch thick rings, ensuring the rings keep their shape.
