Ingredients

4 bone-in, skin-on chicken thighs

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon olive oil

Salt and black pepper, to taste

Fresh parsley for garnishing (optional)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, whole grain mustard, soy sauce, minced garlic, chopped rosemary, olive oil, salt, and black pepper until well combined.

Marinate the Chicken: Place the chicken thighs in a zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour or up to 8 hours for maximum flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Arrange the Chicken: Remove the chicken from the marinade (reserve the marinade for later) and place the thighs skin-side up on a baking sheet lined with aluminum foil or parchment paper for easy clean-up.

Bake the Chicken: Bake the chicken thighs in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

Glaze the Chicken: While the chicken is baking, pour the reserved marinade into a small saucepan and bring it to a boil over medium heat. Reduce the heat and simmer for about 5 minutes to slightly thicken and cook out the raw garlic.

Baste and Finish: Once the chicken is cooked, remove it from the oven and brush the thickened glaze over each thigh. Return the chicken to the oven for an additional 5-7 minutes to caramelize the glaze.

Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired. Serve your delicious maple mustard glazed chicken thighs with rice, roasted vegetables, or a fresh salad for a wholesome meal.
