2 medium acorn squashes, halved and seeded

4 tablespoons unsalted butter

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup walnuts, chopped (optional)

Fresh thyme or sage leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Squash: Cut each acorn squash in half vertically and scoop out the seeds. Place the halves cut-side up on the prepared baking sheet.

      Make the Maple Glaze: In a small saucepan, melt the butter over medium heat. Once melted, stir in the maple syrup, cinnamon, nutmeg, salt, and pepper. Mix well until the ingredients are fully combined and heated through.

        Glaze the Squash: Spoon the maple glaze generously over each acorn squash half, ensuring that it seeps into the cavity.

          Roast the Squash: Place the baking sheet in the preheated oven and roast the squash for about 30-35 minutes, or until the flesh is tender and caramelized. Halfway through (around 15 minutes), baste the squash with the remaining glaze from the baking sheet.
