Mango & Shrimp Salad Bowl

Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

2 ripe mangoes, diced

2 cups mixed salad greens (arugula, spinach, and romaine)

1 avocado, diced

1 small red onion, thinly sliced

1 bell pepper (red or yellow), diced

1 cucumber, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon honey (or agave syrup)

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped for heat

Instructions
 

Prepare the Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil. Season the shrimp with salt, pepper, and half of the lime juice. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the remaining olive oil, honey, cilantro, and the rest of the lime juice. Adjust seasoning with salt and pepper to taste.

      Combine the Salad Base: In a large mixing bowl, combine the mixed greens, diced mango, avocado, red onion, bell pepper, and cucumber. Toss gently to mix all the ingredients well.

        Add the Shrimp: Once the shrimp are cooled, add them to the salad mixture.

          Dress the Salad: Pour the dressing over the salad and toss gently until all ingredients are coated evenly.
