4 boneless, skinless chicken breasts

3 tablespoons olive oil

Zest and juice of 2 lemons

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)

4 cloves garlic, minced

Salt and pepper to taste

1 pound fresh green beans, trimmed

1 tablespoon butter (optional)

Marinate the Chicken: In a bowl, mix together 2 tablespoons of olive oil, lemon juice, lemon zest, rosemary, minced garlic, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably 2 hours for maximum flavor.

    Prepare the Garlic Green Beans: In a medium saucepan, bring water to a boil. Add the trimmed green beans and blanch for about 2-3 minutes until bright green but still crisp. Drain and rinse under cold water to stop the cooking process. Set aside.

      Cook the Chicken: In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Remove the chicken from the marinade (discard any leftover marinade) and add to the skillet. Cook for about 6-7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).

        Sauté the Green Beans: Once the chicken is cooked, remove it from the skillet and cover with foil to keep warm. In the same skillet, add the butter (if using) and sauté the garlic until fragrant, about 30 seconds. Add the blanched green beans and toss to combine.
