Ingredients

2 cups all-purpose flour

1 tablespoon poppy seeds

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon extract

Zest of 2 large lemons

1 cup plain Greek yogurt

½ cup freshly squeezed lemon juice

Powdered sugar for dusting (optional)

Fresh lemon slices for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan or spray it with non-stick cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Add Eggs and Extracts: Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract, lemon extract, and lemon zest. Mix until combined.

Incorporate Yogurt and Lemon Juice: Alternately add the dry ingredient mixture and the Greek yogurt to the butter mixture in three additions, beginning and ending with the dry ingredients. Stir in the freshly squeezed lemon juice until just combined.

Pour Batter into Pan: Carefully pour the batter into the prepared Bundt pan, making sure to smooth the top with a spatula.

Bake the Cake: Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10-15 minutes. Then, carefully invert it onto a wire rack to cool completely.

Optional Glaze: If desired, make a simple glaze by mixing powdered sugar with lemon juice until smooth and drizzle it over the cooled cake.

Serve: Dust the cake with powdered sugar and garnish with fresh lemon slices before serving. Enjoy your zesty creation!
