Lemon Parmesan Chicken and Rice

4 boneless, skinless chicken breasts

1 cup uncooked long-grain white rice

2 cups chicken broth

1 lemon (zested and juiced)

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a bowl, mix together the lemon juice, lemon zest, minced garlic, olive oil, thyme, oregano, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Cook the Rice: In a medium saucepan, bring the chicken broth to a boil. Add the uncooked rice, reduce to a simmer, cover, and cook for about 15-18 minutes, or until all the broth is absorbed and the rice is tender. Remove from heat and let it sit covered for another 5 minutes.

      Sear the Chicken: In a large skillet over medium-high heat, add the marinated chicken breasts. Sear on each side for 5-7 minutes, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). If you have a thicker chicken breast, you might need to cover the skillet slightly to help cook through.

        Add Cheese: Once the chicken is cooked, sprinkle the grated Parmesan cheese over the breasts and reduce the heat to low. Cover the skillet for a couple of minutes, allowing the cheese to melt beautifully.

          Serve: Fluff the cooked rice with a fork, then plate a generous scoop on each dish. Garnish with a piece of the cheesy lemon chicken on top. Sprinkle with chopped fresh parsley for an added pop of color and flavor.
