Lemon Herb Grilled Salmon with Asparagus

Ingredients
  

4 salmon fillets (6 ounces each)

1 bunch of asparagus, trimmed

1/4 cup olive oil

2 tablespoons fresh lemon juice (about 1 lemon)

Zest of 1 lemon

3 cloves garlic, minced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried)

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

Lemon wedges and extra herbs for garnish

Instructions
 

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, salt, and black pepper until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour half of the marinade over the salmon, making sure each piece is well coated. Reserve the other half of the marinade for later. Cover the dish or seal the bag and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

      Prepare the Asparagus: While the salmon is marinating, prepare the asparagus by tossing it with olive oil, salt, and pepper in a separate bowl.

        Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 450°F). If using a charcoal grill, ensure the coals are glowing white and hot.

          Grill the Salmon: Carefully place the marinated salmon fillets on the grill, skin side down. Grill for about 6-8 minutes without moving them, until the flesh is beginning to change color and flake easily with a fork.

            Add the Asparagus: After the salmon has grilled for about 6 minutes, add the asparagus to the grill alongside it. Grill the asparagus for 5-7 minutes, turning occasionally, until tender and slightly charred.

              Finish and Serve: Once the salmon has reached an internal temperature of 145°F and the asparagus is cooked through, remove both from the grill. Drizzle the reserved marinade over the fish and veggies for extra flavor.

                Garnish and Enjoy: Serve the salmon and asparagus with lemon wedges and additional fresh herbs on the side.
