Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

1/2 cup freshly squeezed lemon juice

1/4 cup honey

1 tablespoon soy sauce

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the lemon zest, lemon juice, honey, soy sauce, olive oil, minced garlic, red pepper flakes, salt, and pepper until well combined.

Marinate the Shrimp: Add the peeled and deveined shrimp to the bowl, making sure each shrimp is well-coated with the marinade. Cover and refrigerate for 15-30 minutes to allow the flavors to meld.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp with all the marinade. Cook for about 2-3 minutes on one side until they begin to turn pink. Flip the shrimp and cook for an additional 2 minutes or until fully cooked and glossy. Be careful not to overcook, as shrimp can become rubbery.

Reduce the Glaze: If you desire a thicker glaze, remove the cooked shrimp from the skillet and continue to simmer the remaining marinade for another 2-3 minutes until it becomes syrupy.

Serve: Return the shrimp to the skillet, tossing them in the sauce to ensure they are nicely glazed. Remove from heat, garnish with fresh parsley, and serve with lemon wedges on the side.
