Ingredients

1.5 lbs flank steak

1/4 cup soy sauce

1/4 cup freshly squeezed lemon juice

2 tablespoons honey

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon freshly grated ginger

1 tablespoon olive oil

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

Zest of 1 lemon

Chopped fresh parsley for garnish

Instructions

Marinate the Beef: In a large bowl, whisk together the soy sauce, lemon juice, honey, Dijon mustard, minced garlic, grated ginger, olive oil, black pepper, red pepper flakes, and lemon zest. Add the flank steak, ensuring it is fully coated with the marinade. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on medium-high on the stovetop.

Remove and Prepare the Steak: Take the flank steak out of the marinade, allowing the excess marinade to drip off. Reserve the marinade for later use. Let the steak rest at room temperature for about 15 minutes.

Grill the Steak: Place the flank steak on the hot grill and cook for 5–7 minutes on each side for medium-rare, depending on the thickness. Use a meat thermometer to ensure the internal temperature reaches about 135°F (57°C).

Prepare the Lemon Glaze: While the steak is grilling, pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce the heat and simmer for about 5 minutes, or until slightly thickened.

Glaze and Serve: Once the steak is grilled to your desired doneness, remove it from the grill and let it rest for about 5 minutes. Slice the steak against the grain into thin strips. Drizzle the lemon glaze over the sliced beef and garnish with chopped parsley.

Enjoy: Serve your zesty lemon glazed beef warm, alongside steamed rice, grilled vegetables, or a fresh salad.
