Ingredients

1 cup couscous

1 ¼ cups chicken broth (or vegetable broth for a vegetarian option)

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

Zest and juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

½ cup fresh basil leaves, chopped (plus extra for garnish)

½ cup cherry tomatoes, halved

½ cup crumbled feta cheese (optional)

Lettuce or endive leaves for serving

Instructions

Prepare the Couscous: In a saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

Cook the Chicken: While the couscous is resting, heat the olive oil in a large skillet over medium heat. Add the diced chicken. Season with salt, pepper, oregano, and paprika. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove from heat.

Sauté Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and soft.

Combine Ingredients: Return the chicken to the skillet. Add the lemon zest, lemon juice, and chopped basil. Stir well to combine all the flavors. Cook for an additional minute.

Mix Couscous: Gently fold the cooked couscous into the chicken and vegetable mixture, ensuring everything is coated in the lemon-basil sauce. Add the halved cherry tomatoes and stir again.

Assemble Cups: If using lettuce or endive leaves, lay them out on a serving platter. Spoon the lemon basil chicken couscous mixture into each leaf to create cups.

Garnish and Serve: Sprinkle the cups with crumbled feta cheese (if using) and additional fresh basil for garnish. Serve warm or at room temperature. Enjoy your refreshing bite-sized creations!
