Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 cup frozen peas (or your choice of hidden veggies like finely chopped spinach or cauliflower)

1/2 cup breadcrumbs (for topping)

1/4 cup parmesan cheese, grated (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Cook Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, add the flour, stirring constantly for about 2 minutes until smooth (this is a roux). Gradually whisk in the milk, ensuring there are no lumps. Continue to cook and stir until the mixture thickens, about 5-7 minutes.

Add Cheeses and Flavor: Reduce the heat to low, and stir in the softened cream cheese until melted. Then add the cheddar and mozzarella cheeses, garlic powder, onion powder, salt, and pepper. Stir until the cheeses are fully melted and the sauce is creamy.

Combine Ingredients: In a large bowl, mix the cooked macaroni with the cheese sauce. Gently fold in the frozen peas (or any hidden veggies you choose).

Transfer to Baking Dish: Pour the mac and cheese mixture into the prepared baking dish, spreading it evenly.

Prepare Topping: In a small bowl, combine the breadcrumbs with the grated parmesan cheese (if using). Sprinkle this mixture evenly over the mac and cheese.

Bake It: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crispy.

Serve: Allow to cool for a few minutes before serving. This deliciously creamy and cheesy dish is now ready to surprise and delight your kids!
