4 large whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup baby spinach, chopped

1/2 cup bell peppers, julienned (any color)

1/2 cup shredded carrots

1/4 cup red onion, thinly sliced

1/2 cup hummus (store-bought or homemade)

Salt and pepper to taste

Optional: 1 tablespoon olive oil for sautéing

Prepare the Veggies: If you prefer your veggies slightly cooked, heat olive oil in a skillet over medium heat. Add the bell peppers and red onion, sauté for 3-4 minutes until softened. Season with salt and pepper.
