12 oz cheese tortellini (fresh or frozen)

1 lb Italian sausage (mild or spicy, based on preference)

3 cups fresh spinach, chopped

2 cups marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh basil for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

      Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and no longer pink. This should take about 5-7 minutes.

        Add Spinach: Stir in the chopped spinach, garlic powder, Italian seasoning, salt, and pepper. Cook for an additional 2-3 minutes, until the spinach is wilted.

          Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, sausage and spinach mixture, marinara sauce, and ricotta cheese. Mix well until everything is fully coated.

            Layer the Bake: Transfer the mixture into the prepared baking dish. Spread it evenly, and sprinkle the top with shredded mozzarella and grated Parmesan cheese.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
