1 pound of baby carrots (or a mix of whole carrots and baby carrots)

2 tablespoons of olive oil

3 tablespoons of honey

1 teaspoon of balsamic vinegar

1 teaspoon of fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

1 tablespoon of butter (optional, for extra richness)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures a high-temperature roast that will caramelize the carrots beautifully.

    Prepare the Carrots: If you're using whole carrots, peel them and cut them into uniform pieces, about 2-3 inches long. If using baby carrots, you can leave them whole or cut any larger ones in half lengthwise for even cooking.

      Make the Glaze: In a small bowl, whisk together the olive oil, honey, balsamic vinegar, thyme, salt, and pepper until well combined.

        Toss the Carrots: In a large mixing bowl, add the carrots and then pour the honey glaze over them. Toss until all the carrots are well coated in the mixture.
