4 large whole wheat or spinach tortillas

1 cup cooked black beans (canned or boiled)

1 cup corn kernels (frozen, canned, or fresh)

1 cup diced ripe avocado

1 cup diced tomato

½ cup diced red onion

1 cup shredded lettuce (romaine or green leaf)

1 cup roasted Hatch green chiles, diced (fresh or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup sour cream or Greek yogurt (for topping)

Fresh cilantro leaves (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Ingredients: If using fresh Hatch chiles, roast them over an open flame or in a hot oven until charred. Place them in a sealed container for about 10 minutes to steam, making it easier to peel. Peel, deseed, and dice them.

    Mix the Filling: In a large mixing bowl, combine the cooked black beans, corn, diced avocado, diced tomato, red onion, shredded lettuce, and roasted Hatch chiles.

      Season the Mixture: Sprinkle the ground cumin, smoked paprika, garlic powder, onion powder, salt, and pepper over the mixture. Gently toss until well combined, being careful not to mash the avocado.
