1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, undrained

1 cup Hatch green chilies, diced (fresh or canned)

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

3 cups frozen tater tots

1 ½ cups shredded cheddar cheese

½ cup sour cream

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Cook the Meat: In a large oven-safe skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula as it cooks. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet with the meat. Sauté for about 3-4 minutes, or until the onion is translucent.

        Add Ingredients: Stir in the black beans, diced tomatoes, Hatch green chilies, cumin, chili powder, salt, and pepper. Mix well and let simmer for 5 minutes, allowing the flavors to meld together.

          Layer the Tater Tots: Evenly spread the frozen tater tots on top of the meat mixture in the skillet.
