For the Dough:

3 cups all-purpose flour

1 tablespoon instant yeast

1 teaspoon sugar

1 teaspoon salt

1 cup warm water (about 110°F)

2 tablespoons olive oil

For the Filling:

1 cup cooked chicken breast, shredded

1 cup Hatch green chilies, roasted and chopped

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon cumin (optional)

For the Egg Wash:

1 egg, beaten

1 tablespoon milk

Prepare the Dough:

    In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well. Make a well in the center and add warm water and olive oil. Stir until a dough forms.

      Kneading:

        Turn the dough out onto a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

          Make the Filling:

            In a medium bowl, combine the shredded chicken, chopped Hatch chilies, mozzarella cheese, ricotta cheese, garlic powder, onion powder, and cumin (if using). Season with salt and pepper. Mix until well combined.

              Preheat Oven:

                Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

                  Assembling the Calzones:

                    Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4-inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles from the dough.

                      Fill the Calzones:

                        Place a spoonful of the chicken filling (about 2 tablespoons) in the center of each circle. Be careful not to overfill. Fold the dough over to create a half-moon shape and pinch the edges tightly to seal. Use a fork to crimp the edges for a decorative touch.

                          Egg Wash:

                            In a small bowl, whisk together the beaten egg and milk. Brush the tops of each calzone with the egg wash to give them a golden color when baked.

                              Bake:

                                Place the calzones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and puffed.

                                  Serve:
