Hatch Chili Beef and Bean Burritos

1 lb ground beef

1 cup Hatch green chilies, diced (roasted and peeled if possible)

1 can (15 oz) black beans, drained and rinsed

1 cup cooked rice (white or brown)

1 cup shredded sharp cheddar cheese

1/2 cup diced onions

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper, to taste

6 large flour tortillas

2 tbsp olive oil

Fresh cilantro, for garnish

Sour cream and salsa, for serving (optional)

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

      - Add the ground beef to the skillet. Cook until browned, breaking it into small pieces with a spatula, about 6-8 minutes.

        - Drain any excess fat, then stir in the diced Hatch green chilies, black beans, cooked rice, cumin, chili powder, smoked paprika, salt, and pepper. Mix well and let it simmer for 5 minutes, allowing the flavors to meld. Remove from heat.

          Assemble the Burritos:

            - Lay out a large flour tortilla on a clean, flat surface. Spoon about 1 cup of the beef and bean mixture onto the center of the tortilla.

              - Sprinkle a generous amount of shredded cheddar cheese over the filling.

                - Fold the sides of the tortilla inward over the filling and then roll from the bottom up to create a secure burrito shape. Repeat with the remaining tortillas and filling.

                  Cook the Burritos:

                    - Preheat a large skillet or grill pan over medium-high heat. You can add a little oil to the pan to enhance crispiness if desired.

                      - Place the burritos seam-side down in the skillet, in batches if necessary to avoid overcrowding. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

                        Serve:

                          - Remove the burritos from the skillet and let them rest for a minute. Slice in half diagonally for presentation.

                            - Garnish with fresh cilantro, and serve with a dollop of sour cream and a side of salsa for dipping.
