2 ribeye steaks (1-inch thick)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup fresh corn kernels (or 1 can sweet corn, drained)

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Salad:

6 cups mixed greens (arugula, spinach, and romaine work well)

1 avocado, sliced

1 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 cup feta cheese, crumbled (optional)

Prepare the Steak: In a small bowl, mix together olive oil, minced garlic, smoked paprika, salt, and pepper. Rub this mixture over both sides of the steaks. Let them marinate for at least 30 minutes at room temperature.
