Grilled Peach & Arugula Salad

Ingredients
  

4 ripe peaches, halved and pitted

4 cups fresh arugula, washed and dried

1 cup crumbled feta cheese

1/2 cup toasted walnuts, roughly chopped

1/4 cup balsamic glaze

2 tablespoons extra-virgin olive oil

1 tablespoon honey

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Grill:

    Heat your grill to medium-high.

      Prepare the Peaches:

        Brush the cut sides of the peach halves lightly with olive oil and season with a pinch of salt.

          Grill the Peaches:

            Place the peaches cut-side down on the grill and cook for about 4-5 minutes, until nice grill marks are formed and the peaches are slightly softened. Flip the peaches over and grill for another 2-3 minutes. Remove from the grill and set aside.

              Make the Dressing:

                In a small mixing bowl, whisk together the remaining olive oil, honey, a pinch of salt, and pepper until well combined.

                  Assemble the Salad:

                    In a large mixing bowl, toss the arugula with the dressing until evenly coated.

                      Add Toppings:

                        Plate the dressed arugula on individual plates or a large serving platter. Arrange the grilled peach halves on top. Sprinkle with crumbled feta cheese and toasted walnuts.

                          Finish with Balsamic Glaze:

                            Drizzle balsamic glaze over the salad for an added touch of sweetness and visual appeal. Garnish with fresh basil leaves if desired.
