2 ripe pineapples, peeled, cored, and sliced into rings

1 cup brown sugar

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 cup rolled oats

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1 teaspoon vanilla extract

Fresh mint leaves for garnish

Prepare the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If you're using a charcoal grill, ensure the coals are evenly spread and glowing.

    Marinate the Pineapple: In a large bowl, combine the brown sugar, melted butter, ground cinnamon, and nutmeg. Add the pineapple rings and toss to coat thoroughly. Let them marinate for about 15-20 minutes for maximum flavor.

      Prepare the Crisp Topping: In another bowl, mix together the rolled oats, flour, baking powder, salt, and chopped nuts (if using). Stir in the vanilla extract along with the remaining melted butter until the mixture is crumbly.
