Grilled Chicken Cobb Salad

Ingredients
  

2 boneless, skinless chicken breasts

4 cups mixed salad greens (arugula, romaine, and spinach)

1 large avocado, diced

2 medium tomatoes, diced

1/2 cup crumbled blue cheese

4 slices of crispy bacon, chopped

1/4 cup red onion, thinly sliced

1/4 cup fresh corn (canned or grilled)

1/4 cup balsamic vinaigrette

1 tablespoon olive oil

Salt and pepper to taste

Optional: fresh herbs (parsley or cilantro) for garnish

Instructions
 

Marinate the Chicken: In a small bowl, mix olive oil, salt, and pepper. Rub the marinade on the chicken breasts and let them sit for about 15 minutes to absorb the flavors.

    Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing into strips.

        Add the Toppings: Evenly distribute the diced avocado, tomatoes, crumbled blue cheese, chopped bacon, red onion slices, and corn over the salad greens.
