2 cups cooked turkey, shredded

1 cup green chilies, diced (canned or roasted)

1 cup shredded mozzarella cheese

1 cup shredded Monterey Jack cheese

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1 tablespoon olive oil

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Prep the Filling: In a large mixing bowl, combine the shredded turkey, diced green chilies, both cheeses, chopped red onion, minced garlic, cumin, and paprika. Mix well until all ingredients are evenly incorporated.

    Sauté the Mixture: In a large skillet, heat the olive oil over medium heat. Add the filling mixture and cook for about 5-7 minutes, stirring occasionally until the onions are translucent and everything is heated through. Remove from heat and set aside.

      Assemble the Quesadillas: Heat a large non-stick skillet over medium heat. Place one tortilla in the skillet. Spread a generous amount of the turkey and cheese filling on one half of the tortilla. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip the quesadilla and cook the other side for another 3-4 minutes, until the cheese is melted and the tortilla is crispy.

          Repeat: Repeat the assembly and cooking process for the remaining tortillas and filling (you can do this in batches if necessary).

            Slice and Serve: Once all quesadillas are cooked, remove them from the skillet and let them cool for a minute. Slice into wedges and garnish with fresh cilantro. Serve with sour cream or guacamole on the side.
