Green Chili Egg Muffins

6 large eggs

1 cup fresh spinach, chopped

1/2 cup green bell pepper, diced

1/2 cup onion, finely diced

1/2 cup canned green chilies, drained

1/2 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: chopped fresh cilantro for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin (12-cup capacity) or use silicone muffin cups for easy removal.

    Prepare the Veggies: In a mixing bowl, combine the chopped spinach, diced green bell pepper, diced onion, and drained green chilies. Stir well to mix.

      Whisk the Eggs: In a large bowl, crack the eggs and whisk them until well blended. Add garlic powder, ground cumin, salt, and pepper, mixing thoroughly.

        Combine Mixtures: Add the vegetable mixture into the bowl with the whisked eggs. Stir in the shredded cheddar cheese until evenly distributed.

          Fill Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full to allow for expansion during baking.

            Bake: Bake in the preheated oven for about 20-25 minutes or until the muffins are puffed up and a toothpick inserted into the center comes out clean.

              Cool Down: Once cooked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then, use a butter knife to carefully loosen the edges and transfer muffins to a wire rack to cool completely.
